This roast sweet potato & avo smash serves a great meal time idea- for lunch or dinner. It packs a punch in MACROs (What? MACROS are just the nutrients that our body needs in large amounts, specifically carbohydrates, fats and protein)... good fats and good carbohydrates.
🛑 Wait, I hear you say, aren’t we supposed to be avoiding carbs?
No. NOT ALL CARBS ARE BAD! We need carbohydrates for energy.
We just need to choose complex unprocessed carbs.
Think whole foods rather than packaged ones.
Think about returning to unprocessed, whole foods that deeply nourish our bodies and our brains.
🐟The same can be said about fats. We used to think that low fat was the way to go. Again - not all fats are created equal. The good fats are those present in seeds, nuts, whole dairy and oily fish.
🥑What I also LOVE about avocado is that it not only delivers good fats, it’s also full of fibre which keeps you fuller longer AND helps with blood sugar balance. I also added a sprinkle of magnesium rich sunflower seeds for extra crunch- another healthy boost!
Here’s the recipe….
Roast Sweet Potato with Avocado Smash
& Sunflower Seeds 🌻
Preheat oven to 200C/ 400F
Ingredients
- 1 whole sweet potato
- 1 avocado 🥑
- 1 lime
- 1 scallion
- 4 cherry tomatoes
- Sunflower seeds
Rub olive oil on a whole sweet potato. Sprinkle with salt and pepper.
Place on tin foil lined tray and roast in middle of oven for 45 mins- 1 hour.
Sweet potato should be lovely and squidgey (easily pierced with a knife)
Meanwhile make your avocado smash- cut avocado in half, remove the stone and scoop out into a bowl. Mash with salt and pepper, juice of half a lime. Add chopped tomatoes and onion.
Cut sweet potato in half - season, dollop on your avocado smash and sprinkle with sunflower seeds!
