🚨I say this every time I post a recipe as I tend to cook urgently. I am sure one day I will be able to spend hours in the kitchen, taking my time, making my own pasta from scratch…

😆Who are we kidding? Hours in the kitchen? No thanks! I would rather be out exploring the world, tasting food made for me! In the meantime, here’s the recipe, more of a shopping list really for my Cheese Bacon & Egg Toasties. There’s just something about a toastie, isn’t there? These really hit the spot, full of protein and flavour, and made from ingredients I usually have on hand in the house. 

🍷As you can see, I like to accompany mine with a glass of wine….

Cheese Bacon & Egg Toasties

Preheat grill setting on your oven.

Ingredients:

Cheddar cheese- sharp or medium

Batch loaf

Onion, sliced

Cherry tomatoes, sliced

Bacon rashers- 6

4 eggs 

Butter 

Take out 8 slices of bread- I LOVE Batch loaf for this!

Put four slices on the grill pan 

Cover with cheese slices- be generous!

Place all 6 slices of bacon on grill also- place pan under grill. While cheese and bacon are under the heat, slice up the onion and the mini tomatoes

Take out the grill, place onion slices and tomatoes and bacon on top of cheesy side; return to grill.

Get started on eggs- heat a pan over medium heat- spray pan with olive oil

Break in the four eggs, cover with a lid to ensure whites are cooked and yolks are runny!

Take out toasties from grill- place second slice of bread on top- return to grill to toast slightly

Take out your plates; place each toastie on each and open up to receive perfectly fried eggs with still runny yolks 💛

Close over and add slather with butter (i melted the butter in the microwave because it was too hard to spread 

ENJOY! Fast food, easy to make, even easier to eat!
