Makes Three Loaves
One for Now, Two For Later…
I love a slice with a cup of tea. I find banana bread particularly delicious when I have a sugar craving or am seeking a bit of comfort when feeling hormonal- hello perimenopause!
I say that this makes three loaves, so you can freeze the other two for later. However, in my house it’s rarely that way. There is no later. Two got eaten almost immediately….
I did slice and freeze the slices of the third loaf for the boys’ lunches the next day- but I didn’t really need to as they were wrapped in clingfilm and would easily keep fresh on the counter.
Anyways- here’s the recipe- I know I am chaotic as a baker (my blender action might be disturbing for some viewers 🤪) and I usually eyeball ingredients- HOWEVER- I’ve done my best to deliver to you FABULOUS people!
Preheat oven to 350F/ 180C
Line three loaf pans with greaseproof paper; or butter and flour them
Ingredients
● 6 very ripe bananas
● 450g butter, melted
● 350g sugar
● 360g self-raising flour
● 6 eggs
● 3 heaped teaspoons baking powder
● 1 tsp vanilla
● 2 bars of milk chocolate cut into chunks
Method
🧈Melt butter in microwave or over stove
🍌Mash bananas in bowl. Add eggs, sugar and vanilla.
🥣Add melted butter, stir till combined
🥄Add flour and baking powder- mix just till flour isn’t in lumps at bottom
🍫Add in chocolate chunks
Divide mixture between the three prepared loaf pans.
Pop in oven and reduce temperature to 160C.
Bake for 45- 50 minutes, or until skewer comes out clean.
HIDE A SLICE FOR YOURSELF!
