Is there any more draining question than, “What’s for dinner?”
I don’t know. I haven't had time to shop… and didn’t I just feed you? Listen, now that the kids are all off school it means a full time food production line goes into full overdrive.
Or not.
Sometimes (read: often) I just can’t be arsed to go BACK out to the shops, so I have a root around in my cupboards and usually find these staples- eggs and tinned beans. Not the ones in tomato sauce- those are delicious too though- I mean cannelini beans and a mixed combo of kidney and black eyed beans.
My version of Huevos Rancheros is filling, energy rich, and bursting with big flavour for minimal effort. It’s a win-win in my house.
Huevos Rancheros
Ingredients
- 3 Shallots, or 1 small red onion
- 3 cloves of garlic
- 1 tin of cannellini beans, drained
- 1 tin mixed beans, drained- kidney, black eye peas etc
- Half to 1 heaped tsp garlic powder
- Half to 1 heaped tsp chili powder
- 1 heaped tsp cumin
- ½ tsp of dried oregano
1 Oxo cube
Red wine
Red cherry tomatoes
4 ripe avocados & 1 lime
8-10 eggs
Grated cheese
1 small tub of sour cream or Greek yoghurt
Tortillas
I like mine spicy 🔥 so I add jalapeno peppers to mine
Method
- Put a large frying pan on medium heat
- Chop the shallots in the magic chopper. Add glug of olive oil to warmed pan, add chopped shallots. Let soften for a few minutes. Add chopped garlic.
- Drain the liquid out of tinned cannellini and mixed beans. Add to frying pan with garlic and shallots. Stir.
- Add your dried herbs: chili powder, garlic powder, cumin and oregano.
- Crumble in Oxo cube and stir through beans adding a ½ glass of red wine
- Stir to combine and warmed through- about five minutes
- Take beans off heat and decant into heat proof bowl, cover while you get on with the rest of the bits
- Quarter tomatoes- set aside in a bowl
- Half and stone avocados. Pop them out of their skins, slice and douse in lime juice and a sprinkle of salt
- Small tub of sour cream or yoghurt- set aside
- Small bowl of grated cheese- set aside
- Poach Eggs- I use a wok-like pan- deeper with rounded edges- I bring the water to the boil, reduce to a simmer and then add eggs one by one. I break the eggs into a mug and then lower them gently into pan of simmering water.
- While the eggs poach I fry the wraps in butter/olive oil and then it’s an assembly job
Assembly
Put 1 to 2 wraps per plate- add beans, grated cheese & top with eggs, tomatoes, avocado and sour cream. Add jalapenos if you want it hot 💚 Eggs are not only great protein sources but also a source of biotin- the B vitamin which supports healthier skin and hair.
