You all know I’m a fan of easy industrial sized cooking to keep my lads fed. I like recipes that are all about throwing everything into a pot, simmer and serve.
🍛This curry does exactly that. It’s my mother-in-law's recipe and I’ve used it for over 20 years. You can adjust the heat to your taste and add more veggies if you want a vegetarian version. Lentils would be a great addition too! The point is that it’s a versatile dish that works for you. Don’t be intimidated by the long list of ingredients- it really is just adding things to a pot and stirring!

Ingredients
🐔5 chicken breasts, boneless & skinless (this would work with fish as well)
🧅2 onions
🧄4 cloves of garlic, peeled
🍅2 tins tomatoes, mashed
🧑🍳1.5 beef stock cubes dissolved in cup of hot water
🫑1 red pepper, chopped roughly
🫑1 green pepper, chopped roughly
🍄Mushrooms- 2 good handfuls
🥥1 can of coconut milk
2 tsp of cumin
2 tsp coriander
2 tsphot curry powder
1 tsp turmeric
½ tsp ginger
½ tsp mild chili powder
½ tsp nutmeg
2 chicken stock cubes, dissolved in cup of hot water
Fresh ginger- thumb sized amount
🌶️1 red chili pepper chopped
🍚Rice, chutney and pitas or wraps & olive oil or ghee
METHOD
● Make rice according to instructions- usually 1 cup rice to 2 cups liquid ratio. I double this because- boys 🤷🏼♀️
● Place a large pot on medium heat
● Mince onions garlic, fresh chili and ginger- add to pot with good glug of olive oil- stir to soften while you get onto prepping the other ingredients
● Add the chicken breasts - I add them sliced into chunks
● Add the dry spices and STIR
● Add chopped peppers and mushrooms
● Add beef stock
● Add tinned, mashed tomatoes
● Stir well & cover, leaving lid slightly open & simmer for 10 minutes- your chicken will be cooked and you can break it up in the pot
● Meanwhile chop your mushrooms and add to pot- stir- another 5 mins
● Finally add your coconut milk let heat through for another 5 minutes
SERVE on a bed of rice with warmed up pita and chutney DELISH!
